Description
Overnight maceration in press to facilitate juice and flavour extraction. After pressing the juice settled for 18 hours before racking and filtration. The juice was then transferred to barrels (20 new French oak barrels) and inoculated with yeast. After 3 weeks of fermentation, the yeast died off naturally and a perfect balance was obtained. Only 4250 l of this wine was produced.
